Hmmm, food.
Jun. 23rd, 2006 03:55 pmAfter my morning meeting in Cambridge with my AWEA boss, I went to Haymarket to the farmer's market there, and picked up about $7 worth of veggies, which is way more than it sounds. No mushrooms, though. I may go back tomorrow and blow another $3 on a few pounds of potatoes, zucchini, and some more apples.
As *soon* as I got home, a thunderstorm unleashed, but it didn't last long. I spent the time deciding what to make with 3 eggplants. I'm not a big eggplant fan, but I thought it might be nice to try an eggplant lasagne.
So:
1. "strange-flavor" eggplant from the China Moon Cookbook. It's a pureed spread, so in that sense similar to baba ganouj, but Chinese. Very tasty, but I haven't had it in years.
2. Eggplant Ratatouille Provencale, riffed from The Joy of Cooking. I didn't have olives, and there's probably something else I didn't do, but big whoop. Olive oil, onions, garlic, then after they're sauted, add veggies (zucchini, tomato, bell pepper, and cubed eggplant [salted and drained in advance]). Toss some chopped basil or oregano (I used dried oregano) and drizzle some more olive oil on all that, then cover and simmer on low heat for 45 minutes. Then, simmer uncovered on low heat while cooking up some rice.
3. ?? dunno yet. Maybe baba ganouj. Maybe more strange-flavor eggplant. Maybe, lasagne.
